Bistro-Style Mussels and Fries

There are few dishes that say "bistro" like a steaming pot of mussels with a pile of crispy fries. This one comes from Marta Domingos Freitas of Marta's Bistro: simple, fast, and built around a rich, garlicky white wine sauce you'll want to mop up with warm baguette.

Bistro-Style Mussels and Fries

Ingredients

Nine, start to finish
  • 1 kg mussels (cleaned, beards removed)
  • 2 tbsp olive oil
  • 2 shallots, small diced
  • 2 cloves garlic, sliced
  • 1 tsp salt
  • ½ cup white wine
  • 2 tbsp butter
  • 1 cup chopped flat-leaf parsley
  • Fries, cooked and crispy (for serving)

Method

  1. Heat the olive oil in a large lidded pan over medium heat and cook the shallots until soft, then add the garlic and cook briefly until fragrant.
  2. Add the mussels, salt, and white wine, cover with a lid, and steam for 5–7 minutes until the mussels open, discarding any that remain closed.
  3. Remove from the heat and stir in the butter and chopped parsley until melted and combined.
  4. Serve immediately with hot, crispy fries and plenty of warm, crusty baguette for dipping into the rich, garlicky white wine sauce.
